We recommend this tasty cauliflower-based vegetarian ceviche, with avocado and lime. It’s full of flavor and a tasty alternative for those who do not eat fish or seafood. Its taste doesn’t take a back seat to traditional ceviche. Although we are not vegetarians at home, we do enjoy a few days without meat. For this ceviche, I used a versatile ingredient that goes a long way in many dishes: cauliflower.
Ingredients:
1 Hass avocado ripe, fresh, cut in half, peeled, and diced
1 cup cauliflower, diced
2 tomatoes, diced
1/3 cup red onion, finely chopped
1 tablespoon jalapeño pepper, minced
1 clove garlic, chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon lime juice
½ teaspoon salt
1 tablespoon olive oil
In a large bowl, combine avocado, cauliflower, tomato, onion, jalapeño, garlic, cilantro, lime juice, salt, and olive oil.
Transfer to a serving bowl and enjoy with French fries.
Serve as an appetizer or a side dish.
