Summer rolls with Asian ginger dipping sauce.

30azbA great and fun way to eat raw vegetables, try doing this recipe with the kids! If you know how to roll burritos, you know how to do this. It looks so beautiful, and it’s really flavorful.

Summer rolls are a great way to keep it light this summer, you can find the rice paper on any grocery store at the Asian section.

Summer rolls with Asian ginger dipping sauce:
Dipping sauce Ingredients;
3/4 cup almond butter
1/2 cup water
Juice of a 1/2 lemon
2 T honey or maple (optional)
2 T finely minced fresh ginger
2 tsp tamari or Coconut Amino
2 cloves garlic
1/2 tsp red pepper flakes (optional)

Summer rolls ingredients;
1 pack rice paper
Shredded and/or julienne vegetables like;
Carrots,
Jicama,
Beets,
Bell peppers,
Sliced avocado,
Your favorite sprouts.
Whole lettuce leaves.

Instructions;
Fill a container with cold water big enough to fit the rice pepper,
Have all your vegetables ready.
Place a big cutting board on the counter, dip the rice paper completely on the water with a quick motion, set it down on the cutting board.
It will seem that the paper is not playable, but by the time you finish placing the ingredients on it it will be perfect for rolling;
Start with a green lettuce leaf, continue with your favorite shredded vegetables and sliced avocado.
Roll it just like a burrito!!
For the sauce;
Blend everything until smooth, serve with the rolls.
