Easy Summer Falafel with mango tahini sauce

 

It is such a hot summer in Tucson and we don’t feel like cooking or fusing to much in the kitchen. Here is a extremely simplified Falafel recipe “Holistic Food Chef “style with the added protein of Super food “Chia “seed and all light and healthy ingredients.
This super easy dish comes with an incredible mango sauce, eat on lettuce cups with shredded raw vegetables and pour mango sauce over it. It also makes an amazing party dish or appetizer sure to impress your guests.

Easy Summer Falafel with mango tahini sauce

1 ½ cups chick peas or 15oz can
½ small onion quartered
3 cloves garlic
½ cup parsley cut coarsely
1 T ground cumin
1 T ground coriander
2 T chia seed flour or grounded flax seed (or any other flour)

On A Food Processor Chop Garlic Fine, Add Rest Of Ingredients And Pulse Until It Forms A Dough, Add A Bit Water If Necessary.
Form Into Meat Ball Size Balls And Sauté On A Non Stick Pan At Med-High Heat Until Golden Brown On Both Sides, About 15-20 minutes.

Mango Tahini Sauce

1 medium size ripe mango peeled and cut
2 T white wine vinegar /or lemon juice
3 T tahini
1/8 tsp salt
1/8 tsp red pepper flakes
Add everything to a food processor or blender and process until smooth, serve over falafels on a lettuce cup with raw shredded vegetables
